Krzysztof Bachleda Curuś's Shepherd's Hut in Skawica
The surname Bachleda Curuś in Podhale obliges and belongs to one of the most famous highlander's families. Krzysztof Bachleda Curuś was born in Poronin near Zakopane, but now owns a homestaed far from Skalne Podhale. Yet his oscypki and other sheep milk cheeses taste as great as they do in the heart of the Tatra Mountains. Perhaps it has a lot to do with to family secrets about making highland cheeses. The senior shepherd himself does not want to reveal the recipe for his oscypek. 'It is my closely guarded secret,' he confesses. His grandfather used to work at a shepherd's hut, but he died when Krzysztof Bachleda Curuś was only a few years old. He learned how to make oscypek from a neighbour in Poronin. 'Later, I worked my way up to everything on my own. I am self-taught as I did not work at any shepherd's hut. I was neither a novice shepherd nor a shepherd's helper,' says the shepherd. Perhaps this is why, according to connoisseurs of sheep specialities, the oscypek from this shepherd's hut has a unique taste and is easily recognised? Or maybe it is due to the local microclimate? We do not really know – all that matters is that all the products are exceptionally tasty and healthy.
